How To: Make a Delicious Chocolate Cake (gluten free & dairy free)

There’s nothing better on a cold winter night than a slice of warm chocolate cake and glass of milk! Here’s our take on the classic that is relatively simple and works well with substitutions needed for dietary restrictions.

The recipe below is from our book: Cooking for Grownups: Easy, Nutritious, and Delicious Recipes with Gluten Free, Low-FODMAP, and Vegetarian Options. This book is perfect for the “what should we make for dinner” debate, for planning your next trip to the grocery store, and as a reminder of fun meals and good times. Servings: 9
Ingredients
- 1 ½ cups white sugar (or 1 cup if you prefer a “less sweet” cake)
- 1 ¾ cups all-purpose flour (for gluten-free use almond flour and add 2 tsp xanthan gum)
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup milk (for dairy-free use oat milk)
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- OPTIONAL: 5 dashes of orange or angostura bitters
- 1 cup hot water
Directions
- Preheat your oven to 350 degrees F. Prepare a 9” x 13” baking pan with a layer of cooking spray or oil.
- In a large mixing bowl, whisk together all the dry ingredients. Add in the eggs, milk, oil, vanilla extract. For a spicy note, add the optional bitters.
- Once the mixture is completely mixed together (no lumps), slowly mix in the boiling hot water. Don’t worry if the batter seems a bit watery, it will all work out in the end!
- Bake for 30 minutes and then check to see if the cake tests done with a knife. If not, put it back into the oven for an additional 5-10 minutes.
- Cool the cake in the pan for 10 minutes, then remove the cake to a platter to finish cooling.
- Garnish with icing, sprinkles, slivered almonds, sliced bananas, or all of the above!
